Baked Chicken and Biscuits

Mmm, chicken and biscuits...a classic favorite in my household.  I typically make it by cooking my chicken in the crockpot all day and then adding pieces of chicken to the gravy I make.  However, I recently tried baking my chicken and biscuits and using this quick and easy recipe which works just as well and saves time.  Try it out and let me know what you think!

Ingredients:

1 can (10 1/2 ounces) condensed cream of broccoli soup
1 can (10 1/2 ounces) condensed cream of potato soup
2/3 cup milk
1/2 teaspoon poultry seasoning
1/8 teaspoon ground black pepper
2 cups frozen mixed vegetables (carrots, green beans, corn, peas)
2 cups cubed cooked chicken or turkey
1 package (7.5 ounces) refrigerated biscuit dough (10 biscuits) 


Directions

(1) Heat the oven to 400°F.
(2) Stir together the soups, milk, poultry seasoning, black pepper, vegetables and chicken in an 11 x 7 x 2-inch baking dish.
(3) Bake for 20 minutes or until the chicken mixture is hot and bubbling.
(4) Stir the chicken mixture.
(5) Top the chicken mixture with the biscuits.
(6) Bake for 15 minutes or until the biscuits are golden brown.

Makes 4 servings.

Comforting Homemade Chicken Noodle Soup

Chicken noodles soup is one of my absolute favorite soups to make!  It's steps are simple, time manageable, and very pleasing to the palate.  This recipe for homemade chicken noodle soup is bound to warm you up during the cold winter months as well.  It's good for you and filling too...it really can't be beat!

Ingredients:

1 tablespoon butter
1/2 cup chopped onion
1/2 cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
1/2 pound chopped cooked chicken breast
1 1/2 cups egg noodles
1 cup sliced carrots
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt and pepper to taste
 
Directions: 

(1) Melt butter in a large pot over medium heat. 
(2) Cook onion and celery in butter until just tender, about 5 minutes. 
(3) Pour in chicken broth and vegetable broth and stir.
(4) Add in chicken, noodles, carrots, basil, oregano, salt and pepper. 
(5) Bring to a boil, then reduce heat and simmer 20 minutes.
(6) Serve in bowls with saltine crackers or bread with butter.

Makes 6 servings

Supreme Chicken and Sausage Casserole

This chicken and sausage casserole incorporates just the right amount of spice to create a deliciously seasoned dish.  Potatoes compliment the chicken and sausage concoction making it one of my favorite indulging meals!  You won't be sorry for trying this recipe...it's seriously so good!

Ingredients:

6 medium potatoes, peeled and quartered
2 bell peppers (red, yellow or green), sliced
1 medium onion, thinly sliced
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1 frying chicken, cut up
1 pound sweet Italian sausage links, cut up
1/4 cup vegetable oil

Directions:

(1) Arrange potatoes, peppers and onions in large, shallow 3-quart casserole.
(2) Mix oregano, paprika, garlic powder, salt, and pepper, and sprinkle half the mixture over potatoes.
(3) Arrange chicken and sausage on top. Pour oil over and sprinkle with remaining seasonings.
(4) Cover and bake at 425 degrees F for 1 hour.
(5) Uncover, and bake at 375 degrees F for 30 minutes, or until browned.

Makes 6 servings.
