Supreme Chicken and Sausage Casserole

This chicken and sausage casserole incorporates just the right amount of spice to create a deliciously seasoned dish.  Potatoes compliment the chicken and sausage concoction making it one of my favorite indulging meals!  You won't be sorry for trying this recipe...it's seriously so good!

Ingredients:

6 medium potatoes, peeled and quartered
2 bell peppers (red, yellow or green), sliced
1 medium onion, thinly sliced
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1 frying chicken, cut up
1 pound sweet Italian sausage links, cut up
1/4 cup vegetable oil

Directions:

(1) Arrange potatoes, peppers and onions in large, shallow 3-quart casserole.
(2) Mix oregano, paprika, garlic powder, salt, and pepper, and sprinkle half the mixture over potatoes.
(3) Arrange chicken and sausage on top. Pour oil over and sprinkle with remaining seasonings.
(4) Cover and bake at 425 degrees F for 1 hour.
(5) Uncover, and bake at 375 degrees F for 30 minutes, or until browned.

Makes 6 servings.

Zesty Brazilian Chicken

This chicken dish offers exotic flavors that will turn an ordinary meal into something amazing!  The tang of orange mixed with the heat of hot pepper salsa are bold and tongue tingling enough to please every picky palate.

Ingredients:

1 lemon
1 lime
1 can (8 ounces) tomato sauce
1 can (6 ounces) frozen orange juice concentrate
1 1/2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1 teaspoon hot pepper salsa
4 boneless, skinless chicken breast halves
3/4 cup chunky salsa

Directions:

(1) Grate the zest of the lemon and lime into a resealable bag.
(2) Squeeze the juice from both fruits into the bag and throw out the pulp and the seeds.
(3) Mix in everything else except the chicken and chunky salsa.
(4) Drop in the chicken, reseal the bag, and refrigerate for a few hours.
(5) Grill the chicken, turning and basting with marinade a few times, for 10 to 15 minutes, or until the center is no longer pink.
(6) Serve with salsa and fluffy white rice.

Makes 4 servings.

Totally Addictive Chicken Wing Dip

Who doesn't love chicken wing dip?  I do...that's for sure!  This chicken wing dip tastes like spicy chicken wings, but without the sloppy mess. It's very addicting and perfect for football and tailgating season. Serve with tortilla chips for the ultimate crowd pleaser.

Ingredients:

2 (8 ounce) packages cream cheese, softened
3/4 cup pepper sauce (such as Frank's Red Hot)
1 cup Ranch-style salad dressing
2 cups diced cooked chicken
1 cup shredded Cheddar cheese


Directions:

(1) Preheat the oven to 350 degrees F (175 degrees C).
(2) In a medium bowl, stir together the cream cheese and hot pepper sauce until well blended.
(3) Mix in the Ranch dressing, chicken and Cheddar cheese. Spread into a 9x13 inch baking dish.
(4) Bake for 30 minutes in the preheated oven. If oil collects on the top, dab it off using a paper towel. Serve with tortilla chips.

Makes 16 servings.

Butter Garlic Cheesy Chicken


A quick and easy chicken dish that's sure to please the whole family. It takes only 10 minutes to prepare and 30 minutes to bake. Whip up a box of instant mashed potatoes or rice for a great side dish and you're set!


Ingredients:

1/2 cup butter
4 garlic cloves, minced
3/4 cup dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 1/2 cups shredded Cheddar cheese
1/4 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/8 teaspoon salt
8 boneless, skinless, chicken breasts, halfed and pounded thin


Directions:

(1) Preheat oven to 350 degrees F.
(2) Melt butter in a saucepan over low heat, and cook garlic cloves until tender, approximately 5 minutes. Transfer mix to a shallow bowl.
(3) In a separate shallow bowl, mix bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.
(4) Dip each chicken breast in the garlic butter mix to coat, then press into the bread crumb mixture.
(5) Arrange the coated chicken breasts in a 9x13 inch baking dish an inch apart.
(6) Drizzle with any remaining garlic butter over chicken and top with any remaining bread crumb mixture.
(7) Bake for 30 minutes or until chicken is no longer pink and juices run clear.

Makes 4 servings.

Asian Inspired Lemon Chicken

This yummy chicken dish offers a little touch of Asian cooking and is ready in as little as 30 minutes. Serve this lemon chicken over rice or with a salad for a complete healthy meal your family will enjoy.

Ingredients...For the Chicken:

2 large boneless, skinless chicken breasts, cut into bite-sized chunks
1 tsp soy sauce
1 egg yolk
1 1/2 tablespoon cornstarch
2-3 tablespoon olive oil, for frying
4 thinly sliced scallions, set aside to serve


Ingredients...For the Sauce:

1 large lemon, zest and juice
2 tbsp sugar
1/4 cup water
1 tsp cornstarch
salt and freshly ground black pepper


Directions:

(1) Put the chicken in a small bowl and toss with the soy sauce. Leave to marinate for 30 minutes.

To make the sauce:

(2) Whisk together the lemon zest. lemon juice, sugar, water and cornstarch in a small saucepan.
(3) Bring to a boil, whisking constantly until thickened, then lower heat to keep warm.
(4) Heat the olive oil in a large heavy-based saucepan.
(5) Whisk together the egg yolk and cornstarch in a small bowl to make a batter.
(6) Dip the chicken in the batter and transfer to frying pan for 3-4 minutes on each side until golden brown and cooked through.
(7) Place on a plate and spoon the warm lemon sauce over the chicken.
(8) Spread the scallions over the whole dish before serving.

Makes 3 servings.

Grilled Chicken with Homemade Veggie Salsa


This fast and easy grilled chicken recipe isn't only delicious, but it's a healthy dish for your family. It's packed full of vegetables that offer vitamins and is ready in 30 minutes or less. The greatest part about this chicken recipe is that it only takes 15 minutes to prepare!


Ingredients:
4 boneless skinless chicken breasts
1/4 cup olive oil
1 medium tomato, seeded and chopped

1/2 medium cucumber, peeled, seeded and chopped
2 tablespoons finely chopped onion
2 tablespoons finely chopped fresh cilantro

1 tablespoon lime juice
1/2 teaspoon salt

Directions:
(1) Heat charcoal grill over medium flame, or coals. This also works by cooking on a George Forman Grill.
(2) While grill heats up, toss together tomato, cucumber, onion, cilantro, lime juice and salt (this will be your salsa creation).
(3) Refrigerate salsa mix for 30 minutes.
(4) Brush chicken breasts with olive oil and grill until no longer pink, about 7-8 minutes per side.
(5) Drain salsa if necessary and serve over chicken.
(7) Garnish with a lime for added flavor and a nice presentation.
